do you use Photoshop? if so, what tool do you use to "cut out" players from the background of an image?

sometimes I try to use magic wand or magnetic lasso but I always end up either cutting the subject, including too much background, or just leaving jagged edges. how do you make nice smooth cutouts like Eli's helmet and the d-linemen in your sig?
