Well, the symbolism of the rabbits and eggs have roots in the vernal equinox celebrations of Europe before Christianity took hold. The early church had a policy of "benevolent paternalism" (or something similarly named), under which priests/missionaries were directed to not squelch pagan practices if they could be appropriately co-opted by the Church. It helped them gain, and more importantly, keep converts. Now, granted, Easter happened when it happened, as the date is tied to Passover, but much of the symbolism attached to it is pagan in origin. Granted, none of these things actually made way into the actual religious practices of the Church, but only remained as concomitant folk practice. And at least in English, the holiday's name has its origins in a Norse/Celtic deity Oester.

So, while the celebrations may have strayed from its religious roots, at least those practices still have some kind of basis that surrounds the holiday.
